چکیده

The seed storage proteins (SSPs) of cultivated wheat (Triticum aestivum and T. durum), namely, glutenin and gliadin, impart viscoelastic properties to bread dough, making wheat well suited for bread-making. Extensive studies on wheat SSPs have been carried out and revealed genetic diversity among wheat cultivars. Here, we review the studies of SSPs from more exotic species in the Triticeae tribe, primarily based on our own recent studies. SSPs of barley (Hordeum vulgare), homologous to those in wheat, exhibit quite different properties to wheat SSPs and do not produce viscoelastic dough. However, SSPs of a wild barley species (H. chilense) possess similar characteristics to the proteins of wheat. SSPs of rye (Secale cereale) substituted for wheat SSPs result in inferior quality. SSPs of Aegilops searsii and Ae. longissima have positive effects on quality, while Ae. umbellulata and Ae. geniculata (U genome) SSPs have a negative effect on bread-making quality. SSPs located on chromosome 1M of Ae. geniculata and a chromosome 1E of Thinopyrum elongatum have positive effects in addition lines but not in substitution lines for chromosome 1D of wheat. In contrast, SSPs of Th. intermedium have positive effects, even in cases of substitution for chromosome 1D of wheat, indicating promising potential for improvement of bread-making quality of wheat. Based on these results, we discuss the possibilities for utilizing the genetic variation of exotic Triticeae species for breeding improved quality traits in wheat.

Effect of temperature and post-harvest storage duration on flour quality and dough rheological properties of bread wheat (Triticum aestivum L.) cultivars

Management of storage conditions can affect bread wheat grain quality that may lead to improvement of flour qualityand balancing rheological properties of dough. Therefore, controlling the storage conditions as well as the storage duration of bread wheat grain has a significant role in the flour quality and rheological properties of dough. The aim of this study was to investigate the effect of ...

Grouping of bread wheat cultivars by seed storage proteins. Sonia Kahrizi1, Mohammad Sedghi2* and Omid Sofalian2

To determine seed storage protein banding patterns in some bread wheat cultivars and the similarity of banding patterns among different cultivars, an experiment based on seed storage protein electrophoresis (albumin and globulin) was performed. Water and salt soluble proteins were extracted in sixteen wheat cultivars using polyacrylamide gel electrophoresis and banding pattern was obtained. Stu...

Effects of storage duration and temperature of hydro-primed wheat seeds on seed and seedling quality

Quality of seed as a propagating organ and the most valuable input to produce crops is highly important in agriculture. Thus, the objective of this study was to compare the effects of storage temperature (15, 20 and 25 °C) and storage duration (0, 2, 4, 6 and 8 days) of hydro-primed wheat seeds of Koohdasht dry land cultivar on germination and seedling characteristics. The seeds were hydro-prim...

Morphology, Biochemical and Genomic Diversity of Hexaploid Wheat (Triticum aestivum L.) Varieties in Ethiopia: A Prospective Study

Hexaploid Wheat (Triticum aestivum L.) is one of the most important food cereals grown in many areas worldwide. World population is to increase by 2.6 billion in 2050. Ethiopia is one of the world’s nine countries needed to increase food production. Since few studies on genetic diversity & in adequate evaluation of bread wheat varieties; my objective the project is to study genetic diversity of...

Haplotype Variation of Glu-D1 Locus and the Origin of Glu-D1d Allele Conferring Superior End-Use Qualities in Common Wheat

In higher plants, seed storage proteins (SSPs) are frequently expressed from complex gene families, and allelic variation of SSP genes often affects the quality traits of crops. In common wheat, the Glu-D1 locus, encoding 1Dx and 1Dy SSPs, has multiple alleles. The Glu-D1d allele frequently confers superior end-use qualities to commercial wheat varieties. Here, we studied the haplotype structur...
